Easy Vegan Mexican Rice Recipe

Ingredients: 
-2-3 tablespoons oil (we used avocado oil)
-1/4 onion (sauté first)
-1 cup long-grain white rice (add after the onion and let brown for around 5 minutes)
-1-2 tablespoons of seasoning to taste (we used comino, salt, and a garlic blend)
-1 vegan bouillon cube (break it down and mix)
-4-6 ounces of tomato sauce (you can also add some tomato chunks, let this simmer for about a minute)
-2 cups hot water (mix in the beginning, then allow it to work its magic for about 20-30 minutes)

Pro Tip:
-When its done, turn off the heat and let the rice sit for about 5 more minutes. Fluff it with a fork after, but don’t stir to avoid a mush-like texture.

Optional:
-Add ingredients like carrots, peas, celery, jalapeño pepper, cilantro or corn to your rice. 
-Sprinkle lime on top of rice for added flavor.
